Spread walnuts on a tray. Toast in a 175°C oven for 12 minutes until fragrant and lightly golden. Watch closely — burnt walnuts ruin the stew.
Cool. Pulse in a food processor in 2-3 batches until they form a fine, slightly oily paste — texture of coarse almond meal. Do not pulse to butter.
Pat chicken dry. Heat 2 tbsp oil in a heavy pot over medium-high. Brown chicken skin-side down for 6 minutes per side until deeply golden. Lift onto a plate.
