    Fry the onions

    Fry sliced onions in ghee over medium-high heat, stirring frequently, for 20–25 minutes until deep golden brown and caramelised. Drain half for garnish, use half in the gravy.

    Golden fried onions (birista) are the soul of biryani — don't rush this step.

    Make the vegetable gravy

    In the same pan, add whole spices and cook 1 minute. Add ginger-garlic paste, tomatoes, biryani masala, turmeric and chilli. Cook 10 minutes. Add vegetables and yoghurt, cook covered 15 minutes.

    Parboil the rice

    Cook soaked rice in heavily salted boiling water with whole spices until 70% cooked (grains still have a white centre). Drain immediately.

    Layer the biryani

    In a heavy pot, layer: vegetable gravy → parboiled rice → mint and coriander → fried onions. Drizzle saffron milk over the top. Repeat. Seal with a tight lid or dough.

    Dum cooking

    Cook on high heat 3 minutes to generate steam, then reduce to the lowest heat possible and cook 25–30 minutes. The biryani steams in its own moisture.
