Karjalanpiirakka, or Karelian pasties, are one of Finland's most recognizable traditional foods, originating from the region of Karelia (now partly in Russia). Combina rye harina, harina de uso general, and sal. Agrega agua fría and Mezcla until a stiff, non-sticky dough forms. Knead briefly — rye dough should not be over-kneaded. Wrap and Descansa for 20 minutes.
Divide the dough into 12 balls. On a well-floured surface, roll each ball into a very thin oval (about 2mm). Place 2–3 tablespoons of arroz porridge in the center of each oval, leaving a 1.5 cm border.
Incorpora the sides of the dough upward over the filling, pinching and crimping the edges firmly to create the characteristic fluted border. The filling should remain exposed in the center — these are open-faced pastries.
Preheat oven to 250°C. Place the pasties on a baking paper-lined tray. Hornea for 12–15 minutes until the edges are crisp and lightly browned. Mezcla melted mantequilla with leche and brush the pasties immediately after removing from the oven.
Finely Pica or mash the hard-boiled huevos and Mezcla thoroughly with softened mantequilla and sal until a spreadable paste forms. Sirve the warm pasties with a generous spoonful of huevo mantequilla spread over the top.
The rye dough must be rolled very thin — 2mm — or the pastry will be too thick and doughy.
Enfría the arroz porridge completely before filling; warm filling makes the dough soggy.
Brush with the mantequilla-leche mixture immediately from the oven to keep the pastry pliable.

Store cooled pasties in an airtight container at room temperature for 2 days. Warm in a 150°C oven for 5 minutes before serving. Freeze uncooked for up to 1 month.
