Robert William 'Bobby' Flay is an American chef, restaurateur and television personality who became one of the most recognisable Food Network stars of the 1990s and 2000s and one of the first US chefs to popularise southwestern-American flavours β chiles, smoked spices, mesquite-grilled meats β outside their regional home.
Flay was born in New York City and famously dropped out of high school at 17. He took a kitchen job at Joe Allen restaurant in Manhattan, where the owner sponsored him to attend the French Culinary Institute in its first graduating class in 1984. After working under Jonathan Waxman β the chef who introduced him to American regional ingredients β and a stint as executive chef at Miracle Grill, he opened Mesa Grill in Manhattan in 1991 with restaurateur Laurence Kretchmer. Mesa Grill became one of the defining New York restaurants of the 1990s and ran for 22 years before closing in 2013.
He followed with Bolo Bar & Restaurant (Spanish-influenced, 1993), the steakhouse Bar Americain (2005), the upscale burger chain Bobby's Burger Palace (2008), and Gato (Mediterranean, 2014). On television he has hosted Grillin' & Chillin', Boy Meets Grill, Throwdown! with Bobby Flay, Iron Chef America (where he was one of the original 'Iron Chefs') and Beat Bobby Flay, among many others. He has won multiple James Beard Awards, has a star on the Hollywood Walk of Fame (the first chef to receive one) and is a co-founder of the Bobby Flay Foundation, which supports culinary education for young chefs.
