Karahi (named after the thick-bottomed steel wok it is cooked in) is the most popular restaurant dish in Pakistan — from the roadside dhabas of the GT Road to the finest Karachi restaurants. The dhaba-style version is the purest: bone-in chicken cooked at high heat in a very small amount of oil and tomato, with generous ginger, green chillies and no cream or yogurt. The technique is essentially a dry braise — the chicken releases moisture into the tomatoes, which evaporate and caramelise against the hot steel walls of the karahi, building a deeply flavoured sauce that is thick and clings to every piece of chicken. Julienned ginger and sliced green chilli scattered over the top are non-negotiable.

Heat oil in a large wok or heavy frying pan until very hot — almost smoking. Add chicken pieces. Fry undisturbed 3 min, then stir. Fry 5 more min until well-coloured on all sides.
Add garlic paste and ginger paste. Stir constantly 1 min.
Add chopped tomatoes, red chilli powder, turmeric, cumin, coriander, black pepper and salt. Stir well. Cover and cook on medium-high heat 10 min.
Uncover. Increase heat. Stir and fry until most of the tomato liquid has evaporated and the sauce clings thickly to the chicken, 8–10 min. The oil should separate at the edges.
The drying-out stage is what creates the characteristic restaurant-style karahi — the caramelisation at this stage cannot be rushed.
Add green chillies, garam masala and a small splash of water. Stir 2 min. Transfer to a serving dish. Top with julienned ginger and fresh cilantro. Serve immediately with naan.
High heat throughout is essential — karahi is a high-fire dish. Cooking on medium heat produces a stew, not a karahi.
