Humanely dispatch the crab by chilling in the freezer for 30 minutes. Split in half along the midline and remove the stomach sac. Rinse under cold water.
Pour coconut milk into the bottom of a large pot. Add garlic, lemongrass and salt. Place a steaming rack over the liquid.
Lay the crab halves cut-side up on the rack, pour a little coconut milk over the exposed flesh. Cover tightly and steam over medium heat for 35–40 minutes until the shell is bright orange and the flesh is opaque.
Transfer to a large platter. Spoon the fragrant coconut cooking broth over the crab as a sauce. Serve with steamed white rice and lime wedges.
