Pat scallops completely dry with paper towels to ensure they sear properly.
Heat a cast iron or stainless steel skillet over medium-high heat until very hot.
Add butter and garlic, then place scallops in pan. Sear for 2 minutes per side until golden. Pour in wine and cook for 30 seconds.
Season with sea salt and white pepper. Serve immediately with sauce from the pan.
