Tender beef strips stir-fried with onions, tomatoes, and soy sauce, served over french fries and white rice. A Chifa-Peruvian classic.
Serves 4
Stir-fry beef in a very hot wok until browned. Remove and set aside.
Stir-fry onions and tomatoes, add soy sauce and vinegar.
Return beef, toss with fries, and serve alongside white rice.
Use very high heat for proper wok char.
Substitute chicken or tofu for the beef.
Store in fridge up to 2 days. Fries lose crispiness.
