Slice beef into thin strips against the grain. Season with salt and pepper. Toss lightly with 2 tbsp flour.
Heat 1 tbsp butter and oil in large skillet over high heat. Sear beef in 2 batches, 1 minute per side. Don't overcrowd. Transfer to plate.
Reduce heat to medium. Add 1 tbsp butter. Cook onion until soft, 6 minutes.
Add remaining 2 tbsp butter and mushrooms. Cook over high heat until golden brown, 8 minutes. Add garlic, cook 30 seconds.
Sprinkle remaining 1 tbsp flour over mushrooms, stir 1 minute. Add wine, scraping bottom.
Pour in stock, mustard, and Worcestershire. Simmer 5 minutes until thickened slightly.
While sauce cooks, boil egg noodles in salted water until al dente. Drain.
Reduce heat. Stir in sour cream until smooth. Don't boil after adding sour cream — it can curdle.
Return beef and any juices to skillet. Heat through 1 minute — don't overcook. Adjust salt and pepper.
Spoon stroganoff over noodles. Garnish with parsley.
Don't overcook beef — it should be just past pink.

Use ground beef for casual version.
Make with chicken or mushrooms only.
