  • 4whole tilapia (chambo), cleaned and scaled, about 400 g each
  • 3 tbspcooking oil
  • 2 tspsalt
  • 1 tspblack pepper
  • 1 tspgarlic powder
  • 1 tsppaprika
  • Juice of 2lemons
  • 3ripe tomatoes, finely diced
  • 1small red onion, finely diced
  • 1green chilli, finely chopped
  • 2 tbspfresh coriander, chopped

Instructions

    Cut 3 diagonal slashes on each side of the fish. Mix oil, salt, pepper, garlic powder, paprika, and half the lemon juice. Rub all over and inside the fish cavities. Marinate 15 minutes.

    Combine tomatoes, red onion, chilli, coriander, and remaining lemon juice. Season with salt. Set aside.
