- 100 gall-purpose flour
- 1 tspsalt
- 150 mlcold water
- 2 tbspneutral oil
- 150 gshort-grain rice (puurorisi or pudding rice)
- 300 mlwater (for porridge)
- 700 mlwhole milk
- 1 tspsalt (for porridge)
- 2 tspsugar
- 60 gunsalted butter, melted (for brushing)
- 60 mlmilk (for brushing, mixed with butter)
- 3hard-boiled eggs (for munavoi)
- 80 gsoftened butter (for munavoi)
- salt and pepper to taste

Cook rice porridge
Simmer rice in 300 ml water for 8 minutes until water is absorbed. Add milk, salt, and sugar. Reduce heat very low and cook 35–40 minutes, stirring often, until thick and creamy. Cool completely.

Make pasty dough
Whisk rye flour, white flour, and salt. Stir in cold water and oil. Knead 5 minutes into a smooth, firm dough. Rest 10 minutes, wrapped.

Shape ovals
Divide dough into 16 walnut-sized balls. On a heavily rye-floured surface, roll each into a very thin oval, about 14×10 cm — almost translucent.

Fill
Spoon 1.5 tbsp of cold rice porridge into the center of each oval, leaving a 1.5 cm border.

Crimp
Fold the two long sides inward over the filling, leaving the center exposed. Pinch the open edges into the classic ruffled rim using your thumb and forefinger.

Bake at 250°C for 15–20 minutes, until the crust is dark and crisp and the rice top is lightly speckled.

Brush with butter-milk
While hot, brush each pasty generously with the melted butter and milk mixture. Stack under a clean kitchen towel for 10 minutes — this softens the rye crust to the traditional bendy texture.
