Karjalanpiirakka, or Karelian pasties, are one of Finland's most recognizable traditional foods, originating from the region of Karelia (now partly in Russia). - 150 mlcold water

Cook the rice porridge
Combine rice and water in a saucepan, bring to a boil, then add milk gradually while stirring. Cook on very low heat, stirring frequently, for 30–40 minutes until the rice is very soft and the porridge is thick. Season with salt and butter. Let cool completely.

Make the rye dough
Combine rye flour, all-purpose flour, and salt. Add cold water and mix until a stiff, non-sticky dough forms. Knead briefly — rye dough should not be over-kneaded. Wrap and rest for 20 minutes.

Shape the pasties
Divide the dough into 12 balls. On a well-floured surface, roll each ball into a very thin oval (about 2mm). Place 2–3 tablespoons of rice porridge in the center of each oval, leaving a 1.5 cm border.

Crimp the edges
Fold the sides of the dough upward over the filling, pinching and crimping the edges firmly to create the characteristic fluted border. The filling should remain exposed in the center — these are open-faced pastries.

Bake
Preheat oven to 250°C. Place the pasties on a baking paper-lined tray. Bake for 12–15 minutes until the edges are crisp and lightly browned. Mix melted butter with milk and brush the pasties immediately after removing from the oven.

Make egg butter and serve
Finely chop or mash the hard-boiled eggs and mix thoroughly with softened butter and salt until a spreadable paste forms. Serve the warm pasties with a generous spoonful of egg butter spread over the top.
