Season and brown chicken
Season chicken pieces with salt, garlic, and ginger. Heat oil in a large pot over medium-high heat. Brown chicken in batches until golden on all sides, about 5 minutes per side. Remove and set aside.

In the same pot, add blended tomatoes and onion. Stir in tomato paste and fry over medium heat for 15–20 minutes, stirring frequently, until the mixture darkens and the oil begins to separate. Add scotch bonnet peppers and thyme.
