About This Recipe

Maafé (also mafé, groundnut stew) is one of the great dishes of West Africa — a deeply savory, velvety stew made from peanut butter, tomatoes, and slow-braised meat. Common across the region but most associated with Senegal and Mali, it has a richness and depth unlike any other stew. The peanut butter enriches and thickens the sauce while providing a subtle nuttiness that balances the tomato.

Pro Tips

  • Natural peanut butter (just peanuts) gives the best flavor.

  • Don't skip browning the meat — it builds depth.

  • The scotch bonnet should be left whole and removed before serving for mild heat.

Variations

  • Make with chicken instead of beef

  • Use lamb for a richer version

  • Make vegetarian with chickpeas and extra vegetables

Storage

Refrigerate up to 5 days. Freezes excellently for 3 months.

History & Origin

Maafé originated with the Mandinka people and spread throughout West Africa. In Senegal, it's considered one of the three great national dishes alongside thiéboudienne and yassa. It represents the importance of groundnuts (peanuts) in West African agriculture and cooking.

Frequently Asked Questions

Can I use peanut butter with sugar?

Use natural peanut butter if possible. Commercial sweetened peanut butter makes the stew slightly sweet — reduce any added sugar in the recipe.

How spicy is it?

With a whole scotch bonnet (not burst), it's moderately spiced. Remove it early for mild, leave it longer for more heat, or pierce it for maximum heat.
