Serves 4
Heat oil and fry garlic and ginger 1 minute, then add turmeric.
Stir in tomatoes and cook 5 minutes until soft.
Add lentils and 700 ml water, season with salt.
Bring to a boil, then simmer uncovered 20–25 minutes until lentils are soft.
Serve alongside rice and a meat carry.
Add a squeeze of lime at the end for brightness.
Stir regularly to prevent sticking.
