Trois géographies cuisinent trois cuisines. Les hauts plateaux andins privilégient les préparations copieuses : pachamanca, viandes et tubercules cuits à la terre sur des pierres chaudes ; cuy (cochon d'Inde) ; et des soupes comme la chupe de quinua.
