Inizia con il riso cotto correttamente e la zuppa di miso dal dashi istantaneo: insieme insegnano le basi del pasto. L'oyakodon (ciotola di riso con pollo e uova) utilizza una padella e il rapporto base di condimento soia-mirin-dashi. Il curry giapponese preparato con i blocchi di roux è quasi infallibile. Il tamagoyaki sviluppa abilità senza coltello e il gyoza dagli involucri acquistati in negozio è un soddisfacente passo avanti. Lascia il riso sushi e la tempura per dopo.
Si differenziano per pasta e tradizione. Il ramen è una pasta di grano di derivazione cinese resa elastica con kansui alcalino, servita in ricchi brodi di maiale, pollo o miso. L'Udon è una pasta di grano tenero spessa e gommosa in un brodo più leggero a base di dashi. La soba è una sottile pasta di grano saraceno, dal sapore di nocciola, consumata calda in brodo o fredda con salsa, la più tradizionale delle tre.
